Colored Romanian Easter Eggs

Date April 26, 2008

img_1262.JPGRomanians celebrate Orthodox Easter this Sunday, April 27. One of the moments in preparing Easter meals is to color eggs, especially in red, but also in green, blue or yellow. Tradition say that Thursday before Easter is the day to do that.
So, living in Dublin now doesn’t mean that we forget our tradition. These are the steps in coloring boiled eggs:

1. Wash the eggs (free range or organic).
2. Boil them pretty well in salted water.
3. Put the color in another vessel with water, add a couple of spoons of vinegar. Boil for about 20 seconds. Switch off the gas.
4. Add carefully the eggs, one by one, and mix them with the colored water for about 10 minutes.
5. Take out the eggs, let them for a few minutes and then wipe them with a little bit of oil in order to get some shine.

Happy Easter!
